For the return to this classic style, for which true imported examples from Belgium are becoming increasingly harder to source in Japan, we thought of going back to that wonderful hazy hue associated with Belgian Witbiers. We hope, as you inhale from the glass and then take a mouthful of Returning Mist, that your mind goes back to that first time when you experienced one of the classic editions of this wonderful style.
[Brewer's Voice]
As a Belgian-inspired brewery, we’ve always been fans of the Belgian wit style. A beer defined by the addition of orangepeel and coriander seed, complementing the naturally spicy and fruity Belgian yeast esters, all coming together over a clean wheat malt base offering a pillowy mouthfeel and mild sweetness. Recently, many of the classic examples of this style have been harder to access in Japan, or are no longer imported but made at other breweries internationally. Overall, we have felt that when we've had them, some of the classic examples of these beers just really don’t have quite the same character that we have grown to love. Our friends over at Seijo Ishii felt the same way, and conveniently, we have the ability to fix that. This style starts off very simply being made up of nearly 50% wheat, giving the beers is light signature haze and soft mouthfeel. Hops were kept simple and to a minimum, with an addition of Saaz early in the boil. The late boil was where the real fun happened. We steeped a generous blend of dried Kiyomi peel, candied Kiyomi peel, coriander seed, and Grains of Paradise. We fermented the beer with a classic Belgian wit strain, before getting a second peel addition to condition on, consisting of fresh yuzu peel and fresh kiyomi peel. Lastly, in true Belgian fashion, this beer was can conditioned for natural carbonation, giving the beer a light crisp finish, and give it that authentic Belgian wit character. The medley of Belgian yeast esters, citrus peel and spice comes together in a refreshing and easy to drink beer, with plenty of character perfect for the fall season and into winter.
