For this collaboration with Seoul Brewing, we decided to lean into desserts and go for Korean-style shaved ice, which tends to have a good amount of milk included as well, creating a smoothie-like dessert beer using fruit and red beans
[Character]This is a dessert beer through and through. Crafted around the Korean Dessert patbingsu - a milk-based shaved ice sweet with a variety of toppings including sweet red bean - this beer has a medley of sweet and creamy fruit flavours, but with a slightly savory backbone to tie it all together. If it is body and flavour you want, this beer has plenty![Food Pairing]Cream pasta with oyster and "shungiku" greens, fig and prosciutto salad, hotteok (Korean pancakes) with fruit[Naming]Patbingsu is a traditional sweet that those who have visited Korea may well have come across. "Pat" means red bean, and "bingsu" means ice. The traditional style is made using shaved ice topped with condensed milk and sweetly boiled red beans. In recent years, a wide variety of patbingsu has appeared, just as with Japanese "kakigori" shaved ice, and it is gaining popularity especially among young people, making us think it was a perfect concept for this collaboration![Brewer's Voice]When we started chatting with Seoul Brewing, very early on a suggestion of a Korean dessert-inspired beer came up. When Patbingsu was mentioned, we were super intrigued by combination of flavours in one dish, and we had to go out and order one of these desserts to see what it was all about. The mix of savoury and sweet with the tropical fruit layered over the top was delicious, and left us wondering exactly how we were going to get all these flavours into a beer! This is of the most extreme beers we have ever created. Starting with the mash, we used the sweetened red bean paste to add some base sugar, and some unfermentables from the beans to help add some savoury body. The malt bill is huge, and the wheat and oats really keep the body soft and pillowy, with tons of mouthfeel and, of course, a nice haze to the beer. A hint of special “B” was used, partly because it's James' favourite malt, and partly to add a hint of caramel, sweet raisins and more savoury nuance to the beer. Just a small amount of Kohia Nelson was used to add a touch of passionfruit hop aroma, while giving the beer some stability. We did a short boil to preserve a lot of those long chain proteins to help maintain the body of this beer, while also adding in some extra sugars like honey, lactose, and maltodextrin to layer in the sweetness. This beer then went into the fermenter with lots of mango, mixed berry, and banana puree to ferment and condition on. James took some shredded coconut and toasted it, and added it into the fermenter during cold conditioning along with some more mango and strawberry flavour. After running this monstrosity of a beer through the centrifuge, we back sweetened it with a touch of vanilla to help keep its nice creamy fruit profile. This was a super fun and bizarre beer to make, the amount of different flavours in the beer is immense, and it is truly a dessert in liquid form.
