A dubbel with a local twist, using Japanese dark sugar to add to the layers of flavour
[Character]This Belgian Dubbel, brewed with Kuromitsu sugar, has a rich malt flavour accompanied by fruity Belgian esters. Caramalized sugars and malt bring out raisin-like nuances, a deliciously sweet aroma and a dry finish for plenty of repeat drinkability.[Food Pairing]Sweet and sour chicken and peanut stir fry, mussels and shallots steamed in butter and white wine, charcoal-grilled chicken[Naming]There is something wonderful about the organic way in which a dubbel is constructed. Various notes from the Belgian yeast creates a complex harmony with the blend of malts, and dark sugar finishes it off. In our case, the secret chord is the kuromitsu sugar, adding to the dark fruit nuances.[Brewer's Voice]Bringing back a firm company favorite, Secret chord is our Belgian Dubbel brewed with Japanese "Kuromitsu" dark sugar. This can-conditioned moderately strong brew is inspired by the classic traditional Trappist monk style, but uses more modern hops, and a splash of Japanese flair. Starting with the base malt profile, we kept it simple, with a blend of Pilsner, Munich, and one of my favourite malts, Special B. This gives the beer a nice medium body with flavours of toffee, biscuit, caramel, and raisins. A blend of Styrian Goldings and Rakau hops is an unconventional take on the classic style. Styrian Goldings helps give the beer a soft earthy noble character that adds a layer of depth to the sweet malt profile, while being barely perceivable on its own, and the small amount of Rakau helps bolster up the stone fruit, fig, and dark plum character from the blend of malt character with the Belgian yeast esters. Kuromitsu sugar was added to the boil giving the beer some color from the sugar caramelizing while adding even another layer of caramel and dark stone fruit flavors. This beer is malt-forward and flavourful without being too heavy or dense. The natural carbonation from the can conditioning helps to lighten up this beer, keeping it smooth and easy to drink despite its rich and darker malty appearance.
