A hazy IPA featuring modern Polish hops for a unique character
[Character]A bright and crisp IPA featuring new-world Polish hops offering a unique blend of citrus, berry, and tropical fruit flavours.[Food Pairing]Chinese cabbage with vinaigrette salad, pickled "nishin" fish and potato croquettes, pork shoulder and sausage tomato stew[Naming]"Gensen" essentially means carefully selected, and it felt to us like a fitting name for this mini-series, all based upon carefully chosen or selected ingredients that we wanted to shine a spotlight on. For this second edition, we are focusing on modern Polish hops in collaboration with Hino Brewing in Shiga, and their Polish head brewer.[Brewer's Voice]When it comes to making collaborations, we always try to incorporate elements of both breweries' personalities into the beer. This leads to more mutual learning, but also makes the products truly collaborative to us, as customers experience a taste of both sides at the same time. This can be done in several different ways. Sometimes this is adopting a specific brewing process they use, crafting a recipe more to their style, using yeast that they commonly use, or, in the case of this beer, using hops more unique to that brewery. Hino has adopted the use of an array of different Polish hops in their beers, so when we came to doing a collaboration with them, we knew we wanted to use some in this beer. There has been a big push in growing more modernized IPA-suitable hops in Europe to compete with the more established American and New Zealand grown varieties. For this beer we used Marynka, Zibi, and Amora Preta hops. Marynka is a very clean flavoured high alpha acid bittering hop, which we used at the early stage for bittering of course. Zibi is a newly developed hop with very tropical aromas such as mango and peach. Amora Preta is a high alpha aroma hop with notes of blackberry, citrus zest, and resin. The latter two we used in the Whirlpool and Dry hop. We crafted the beer as a more hybrid East/West Coast style IPA with a heavy amount of oats and wheat, and fermented it with a clean fermenting California Ale strain. This beer was a little bit of an experiment, as we have never tried these Polish hops, nor have we even tried them in a heavily hopped IPA. In spite of the California ale strain, the beer came through with a bit of a haze due to heavily hopped nature of this beer. The beer turned out with some familiar European hop notesm with a touch of herbal and spice up front, followed by a blend of tropical stone fruit. The flavour is quite complex with this beer. With each sip we were picking out different fruit notes. We initially got a strong mango presence, then that faded to a mix of berries and sweet stone fruit, with a little resin character at the end. We feel like this is a beer where everyone will pick up a different character depending on what they are most sensitive to on their pallet, which makes this beer a fun one to drink. With such a complex flavour profile, this beer is likely to evolve and transform over time, as the flavours calm and then meld together.
