Naming:
"Hyotto" is a Japanese word that means "maybe" or "perhaps". It can be used when predicting an outcome.
This felt fitting for the more experimental elements of craft beer brewing, where one can use one's many years of experience to judge what a combination of hops may come through as, or how a yeast strain's esters might interact with them. The new understanding of thiolization, where compounds are released, has added a new layer of this, and frankly there is an element of trial involved in this. This mini series summarises this. We know it'll be tasty. We know it'll be juicy. But exactly how it will taste? All we can say is "Hyotto..."
