Brewer's Voice:
Ichii Senshin is our perennial Belgian IPA. After making a saison, this was the next style that we decided we wanted to make year-round. Belgian IPAs can be a difficult style, with the notes and character of the impactful yeast varieties that Belgian offers, a strength in other styles, often clashing with the character of the hops. Fortunately, our house yeast’s versatility, and the fruit and herb notes it provides, often works along with the fruit and herb notes of many modern hop varieties, rather than against them.
Ichii Senshin has seen a couple of changes over the years since its first inception, but it has been built on a solid malt body of Pilsner, Munich and wheat malt, with the latest edition featuring high quality specialty malts to help ensure a strong backbone for the yeast and hops. On top of that fruity and herbal yeast base, we use bright Riwaka, Rakau and Mosaic hops, bringing a wonderful bouquet of citrus and tropical character which, combined with our brewery’s technology, provides a vibrant and aromatic Belgian IPA, both easy to drink and loaded with flavour.
