A tropical hazy IPA with a soft mouthfeel and vivid aroma of ripe and juicy tropical fruit
[Character]This hazy IPA has an orange hue, with big tropical fruit aromas. Large amounts of wheat and oats give this beer a soft pillow mouthfeel and the honey malt adds a touch of sweetness. Normally it's more like a blend - a band, if you will - of multiple hops performing together. For this series, however, it's a solo artist - a "Hop Idol", if you will, showcasing their individual talents on the big stage. Who would you vote for? The star of this show is Cashmere, the hop we really fell in love with on our trip to the US last year, bringing an unbelievable array of fruity layers to the fore.[Brewer's Voice]When it came for Nectaron’s time to shine in the spotlight, we knew exactly how we wanted to set the stage for that hop. Nectaron has an awesome overripened pineapple character, with notes of tropical citrus. This relatively new hop was released in 2019, and was very well received by brewers, not least because of its huge impact thanks to its extremely high oil content. For these Hop Idol series beers, we generally take the approach of crafting a recipe that is based on balance, with the avoidance of making it too full or heavy. That was not how we looked at Nectaron, however, knowing that a big hop demands a big beer. The base for this beer is that of a slightly sweet hazy IPA, using a heavy-handed combination of wheat and oats, with a bit of honey malt bringing that sweetness. Golden Promise makes up the base, with dextrin malt ensuring the beer doesn’t finish out too dry. As expected, high amounts of Nectaron was used throughout the beer, with a focus on late kettle addition, a mid-fermentation addition for some biotransformation, and obviously a large dry hop. For yeast, we wanted to really take a new approach with this one, so we went with a Kviek strain. Kviek yeast is a Norwegian strain known for its robust durability, extreme heat tolerance, and big tropical fruit esters. While most ale strains ferment around 20-25C, This Kviek strain was fermented at 38C! This is a temperature that would kill many yeast strains. This yeast instead has a vigorous fermentation that finished in just 3 days, and gave us incredible tropical esters. All this came together in a hazy IPA that carries a rich overripened character that could be almost mistaken for caramelized or grilled pineapple, with notes of papaya, and tropical stone fruit to boot. The honey malt gives this beer a nice sweetness, as mentioned, but in addition to supporting the bitterness, this also increases the perception of sweet fruit flavours.
