Back again this year is one of our most accurately named beers in our sour series, Tsubutsu is indeed “Very berry”. At first pour this beer stands out with its deep red and purple hues contributed from a generous blend of mixed berries. Being that berries contain simple sugars, these sugars ferment out completely, so the base beer is designed to regain some of the body and sweetness. Wheat and oats were added for a nice creamy mouthfeel with malt dextrin and lactose added to leave some residual malt sweetness making the beer more smoothie-like. A small amount of meridian hops were used to give the beer stability while adding some berry hop flavors to the taste and aroma. We switched up the yeast this year to a newer thiol focused yeast to add some more tropical fruit character and sweetness. A tart finish from the sour cherries brightens up the beer and balances the sweetness keeping it nice a drinkable without sacrificing too much body. The velvety texture adds a nice mouthfeel to deliver the strong berry flavors. This can be enjoyed as a refreshing summertime treat or even poured over some ice cream for a late-night dessert.
