A slightly modern Weizenbock, showcasing cascade from Shiga along with some more traditional hops, along of course with those lovely weizen yeast esters and soft wheat base.

[Character]
Rich malt forward weizen that blends complex malt and wheat character with strong fruity yeast esters and a touch of domestic hop citrus and pine character to tie it together.
[Food Pairing]
Well sauteed potato in butter, chicken terrine with cashew nuts, smoked "nishin" fish with salad.
[Naming]
Why did the style "Bock", which means "goat" in German, gain it's name? It was originally brewed in Einbeck, a town in central Germany, since the 14th century, and brewers who moved from southern Germany in the 17th century perfected it into the style we know today. And the story goes that in their southern German accents, the pronunciation of Einbeck sounds like ein Bock, which means "goat", and so it became Bock. "Boku" is one of the many ways of saying "me" or "I" in Japanese, and sounds very close to "Bokku", the Japanese pronunciation of "Bock", so we played around with it and went for Boku Bokku, or "My Bock".
[Brewer's Voice]
This beer was brewed in collaboration with the newly established Flora Fermentation, the brewer and co-founder of which, Kai Neubauer, was until recently a brewer in our team, as well as a former brewer from the highly respected Steel and Oak in Canada.

Steel and Oak are known for brewing a lot of classic styles, and Kai has a penchant for German styles, and so we decided to go a Weizenbock. A Weizenbock is a wheat-heavy, malt-forward beer, fermented with Hefeweizen yeast, for which we went with a base made up of predominantly golden promise and rye, and crystal and wheat malts, giving the beer a rich caramel colour, and a light haze. The malt base gives the beer a rich body, with deep caramel and toffee notes, while maintaining its drinkability and finishing with a touch of sweetness. To balance out the malt character, we used a blend of traditional German Tettnang hops and locally grown Cascade whole cone hops, grown and produced by Flora Fermentation. This gives the beer a soft bitterness to balance out the moderate malt sweetness, with some floral and citrus notes that blend right in with the banana and clove esters produced by the hefeweizen yeast. While designed to be rich in flavour and aroma, we kept an emphasis on drinkability, so even though at a higher ABV this beer does not weigh you down.

A great beer to pair with a wide range of foods, or a decadent way to close out your evening, this is a beer well suited to those cold winter nights.
