A stylistic blend of classic weizen with the added fruitiness of the New England IPA for a bright and super drinkable fusion

[Character]
Inspired by Tentsu-san from Yatsugatake's combination of classic German Weizens and a New England IPAs, we worked together to create a beer with strong tropical hop character paired with the fruit and spice from the weizen yeast esters. Hazy, easy to drink, full of soft mouthfeel, and loaded with fruit flavor.

[Naming]
Brewed with Yatsugatake TOUCHDOWN Brewery, based at 1200m in the Akaishi Mountains, we thought that mountain theming would go well, and so went for a pair naming of Heigh-Ho and Ya-ho. Ya-Ho is a regular call out that you might hear children shout out when walking in the mountains, with the goal of hearing one's echo come back. While Heigh-Ho is classic in its snow white beauty, "Ya-Ho" is full of impactful excitement that makes one wish to shout it out loud, and we feel it's also a good symbol of the way the flavours also reverberate in this impactful whear beer.

For the second beer in our collaboration with Miyashita-san (“Tentsu-san”) of Yatsugatake, we wanted to lean into the style he may well be the joint-inventor of, which is the "East Coast Weizen". A true fusion of styles and processes, the idea is to take a traditionally hazy and soft style, which is the weizen, and combine it with the similar elements of the modern hazy IPA. With weizen yeast also being very fruity, this also means you get to enjoy the added layer of fruitiness from the yeast, along with the juicy tropical nature of the New England style IPA.

Inspired by his production methods, we took multiple mash rests, and techniques for extracting maximum weizen yeast character, and combined this with our methods of hop utilization and regiment. While more reserved than our more recent IPAs, this hop load was much larger than Tentsu-san would use. This was a great beer to push both of us a bit outside our comfort zones, and we went on our side with a hop blend of Talus, Audacia, and New Zealand Cascade hops. Inspired a little by a fantastic dry hopped hefeweizen our head brewer James experienced in Munich, this blend of hops seamlessly transitions you from the strong fruity yeast esters up front to delicate flavours of wild flowers, white grape, and citrus. Drinkability was a focus here, and the difficulty was balancing the hop load without overpowering the yeast character. This was a very fun collaboration that was truly a combination of one another's expertise and philosophy. We think the beer turned out quite beautifully, and hope you feel the same.
