A crisp and dry Belgian IPA inspired by dry white wines and the grape-leaning fruitiness of New Zealand hops

[Character]
This dry Belgian IPA has a crisp finish, but offers plenty of tropical fruit flavours. With a golden colour and a light but slightly sweet body, it offers a cocktail of white grape, lychee, lemon and lime-like citrus, with a touch of herbal nuance. The Belgian yeast blends it all together with its strong fruit esters in a very drinkable package, with a wine-like character perfect for the summer.

[Naming]
Marika isn't the showiest of people, but she is bright and complex. Even if she doesn't look to be flashy, there is no lack of personality and character, and she is as fun and varied as her musical taste.
[Brewer's Voice]
Marika takes on a form inspired by Brut champagne and tropical dry white wines. To achieve this, we kept the grain bill simple, using pilsner malt with a little wheat and oats for body, and just a touch of honey malt to add some perceived sweetness to balance out the dry finish. For Hops, we decided to look to New Zealand, and in particular the regions that produce some of the best white wines in the world, and within that of course we had to go with Nelson Sauvin for its distinct white wine-like character. To drive these flavours and aromas further into the beer, we also used a more concentrated version of these hops known as cryo hops, bringing herbal and floral elements on top of the predominant white grape. Alongside the Nelson Sauvin, we used Southern Cross, another New Zealand hop that adds some candied orange nuance. To give it that wine-like dry finish, we had to rely on more than just normal yeast, because typical beer yeast doesn’t have the ability to break down some of the more complex sugars derived from malt. We used an amylase enzyme to break down those complex sugars into simple sugars the yeast can consume, leaving the beer extremely dry, and giving the beer the champagne-like crispness we were looking for.
