This is one of head brewer James' favourite go-to styles due to their lightness and crispness, but also because they have enough depth of flavour to keep you interested without being too taxing on the palette. The Mexican light lager has roots from German style pilsners, has a bit of Czech hop style flair, but lightens up the body and adds a touch of creaminess with the addition of flaked corn. This beer delivers on all these aspects. It has a lightly bready cracker-like character from the malt and yeast, while the aroma has a touch of spice, floral and herbal character from the addition of Saaz hops. The addition of corn seems to enhance these flavours by lightening the beer up, while adding its own subtle nuance.
