The culmination of our "Enhanced" thiol-driven series! A juicy, tropical-infused hazy IPA with an extra powerful aroma.
[Character]A thiol-driven big tropical hazy juicy IPA, loaded with fruit-forward hops, with notes of passionfruit, mango ,and sweet stone fruit. This beer is low in bitterness with a creamy soft malt profile heavy in wheat and light in colour, providing the perfect base for the hops to shine.[Food Pairing]Garlic and butter roasted broccoli, octopus and iyokan salad, stewed beef empanada[Naming]This mini series focuses on the enhancement of IPA as a style, and its constant evolution. We consider this to be a project - our Apollo program, if you will - and for that reason we decided to give similarly themed names, kicking off with Arion and Orion, and now with Haberion.[Brewer's Voice]Last but definitely not least in our series of Thiol-driven IPAs is Sokarion. This hazy double IPA is juicy, full bodied, bursting with tropical aromatics, and surprisingly easy to drink despite its ABV, featuring a punch of guava, candied orange, passionfruit, mango and papaya. The malt starts with Golden Promise, uses 30% wheat in a combination of flaked and malted, and lastly a touch of Vienna malt. Vienna may seem like an odd choice here, but Vienna malt has been measured to contribute a special compound that is a precursor to poly-functional thiols that can be released by yeast. Whilst most brewers look towards yeast types and hop varieties for thiols, we really looked towards all ingredients! As for hops, we once again used some Saaz in the mash for its thiol contribution. Our Chinook hops this last harvest were incredible with a dense tropical character, so we added some later in the boil to add a bit of depth and light bitterness. Some fermentable and unfermentable sugars were added in the boil to boost the ABV, while ensuring the beer maintained its body and did not end up too dry. Whirlpool hops included Southern Cross for some candied orange flavour, and Eggers Special Riwaka for even more mango passionfruit aroma. Our biotransformation hops were New Zealand Cascade and Chinook, both chosen for their tropical thiol contributions. Even more of that wonderful Riwaka was added via dry hopping alongside Cashmere, the last year’s harvest of which was an incredible cornucopia of tropical fruit character all smashed together in one hop. We made sure to keep a moderate hop presence and bitterness to support the ABV and body without interrupting the soft malt and tropical flavours.
