A Mexican dark lager with a lightness of character that belies its appearance, and a gentle elegant hop character to make it seriously moreish

Don’t let appearances fool you - this dark lager has a delicate malt blend that leaves it light in body, has a crisp dry finish, and is easy to drink. A mild hop character lends its way to a refeshing German classic with some Mexican character.

[Naming]
In olden times in Japan, days were divided into 12, meaning each "hour" was the equivalent to modern day 2 hours. At that time, days were typically divided into two halves, half day/half night, and the phrase "nirokujichu" (lit. "through all two 6 hours") meant to do something all day and all night. Nowadays the phrase "Shirokujichu" (lit. "through all four 6 hours") means the same thing. Our goal with this pair of beers, one being a Mexican light lager, and the other being a Mexican dark lager, was to make beers you could drink all day and all night, with the day one being light and the night one being dark.
[Brewer's Voice]
We love a good dark larger and will start off by sharing that Mexican dark lagers are one of head brewer James' favourite go-to beers when he sees one on a menu. Contrary to what the colour of the beer might suggest, these dark lagers can be very light, crisp and drinkable. The dark malts add a touch of complexity, making what would otherwise be a simpler light lager more interesting to the palate. This Mexican dark lager is crafted similarly to a Vienna lager, with a base of Pilsner and Vienna malt, with some chocolate malt, corn flakes, midnight wheat, and light crystal added to give it colour and a bit of fruity caramel sweetness. When it comes to dark malts, a little can go a long way for adding colour, and so we made sure to use the right amount and not take it too far. Hops were kept light, with some classic Styrian Goldings used to balance out the malt sweetness, and some Motueka to give just a hint of fruity lime zest to the aroma. A clean fermenting lager yeast was used, and this beer was cold conditioned for over a month to allow a crisp, clean, super drinkable finish. Needless to say, we'll be bringing home our fair share of these cans.
