A beautifully hued Red IPA with a full classic American hop punch

[Character]
A Red IPA brewed with classic American hops. This Reddish copper-coloured IPA has a mild toffee malt character with a balanced finish which, accompanied by a mix of pine, citrus, and floral aromas from the hops, makes it a great match for the cooling temperatures.

[Naming]
In restaurants in Japan, one may well see "chef no kimagure" on the menu, which essentially means "what the chef feels like", and is typically seasonally based, with local ingredients that he thinks will work together, we wanted to bring this into beer, creating an IPA fitting to the season, and based on what we see and fancy using right now in our hop storage!
[Brewer's Voice]
We made some changes coming into this years Aki No Kimagure, pushing it a little more in the direction of a Cascadian-style red ale. This beer focuses on balancing a mix of more full-flavoured malts, but with classic American hops to elevate the flavors of both while maintaining a crisp dry finish. Red beers, despite the description are surprisingly difficult to achieve that reddish colour. Often it is achieved by using small amounts of dark roasted malts to get the colour without extracting too much sweet or roasted malt flavour. We brought in a couple malts specifically for this beer that we don’t typically use in the forms of Carapils copper and Red-X. Carapils copper is a dextrin malt with a higher level of kilning leading to a reddish copper contribution to the beer colour. Red-X is a malt designed for its red colour contribution that falls somewhere between a Munich and Vienna malt in terms of flavour, but with a bit more sweetness due to its more concentrated sugars from extended kilning. On top of this, we are using an old-school trick, which involves finely milling a black malt (roasted barley) into a flour and sprinkling that malt flour on top of the grain bed at the start of sparge. This helps reduce the effect dark malt has on mash Ph while extracting a deep red hue from the malt which could otherwise turn brown from extended contact time. Paired with this we used an array of heavy hitting classic American hops to get that citrus and pine character associated with Cascadian style ales. Cascade (obviously) was used along with some Centennial, Citra and Simcoe to layer on some hop complexity with the citrus flavours. Hopped like a classic IPA but with complex malt flavors, this beer has a little bit for everyone to enjoy.
