Spiced creamy white stout inspired by a Mexican treat
[Character]Sweet, creamy and milky dessert like beverage with hints of vanilla, cinnamon and coffee.[Food Pairing]Spiced moussaka, fried bonito with chipotle sauce tacos, cinnamon-heavy bean curry[Naming]"Itchuya" literally means all day into night. Inspired by the Mexican "Day of the Dead" festival, which shares conceptually a lot of overlap with the Japanese "Obon" festival (albeit a lot more colourful!), we imagine a family celebration that runs throughout the entire day into the evening, and imagine that these two beers in this mini-series might be just the right kinds of drinks to enjoy on such an occasion.[Brewer's Voice]This was a fun beer to craft! Living in southern California for a large portion of my life I was exposed to all sorts of Mexican cuisine. Just about every authentic Mexican place had their own horchata recipe passed down from generations. This sweet creamy beverage is always a wonderful treat on a hot day.
The origin of this beverage is a bit all over the place with some roots in Spain and even dating back to ancient Rome. Each of these locations all have their own spin they put on it, some of the classic recipes used barley and rice as well, so it seems only fitting to turn this into a beer using those same ingredients.
To stay true to its roots, we used a blend of rice, oats and Maris Otter Barley to give the beer a nice creamy like texture. During the brew we added some Lactose and brown sugar to add to the milky like body and add some depth to the sweetness. Conditioned with some coffee, vanilla, cinnamon and a bit of coconut; this is truly a decadent beer to be enjoyed and shared with others.
