When making the second beer in collaboration with the JRA, they were looking for an IPA and something a bit more on the “grassy” side, conjuring images of the grassy turf upon which the horses race. While too much grassiness can be undesirable in an IPA, getting the balance right was a fun challenge we leaned into. In making the beer appealing and balanced, rather than just a “grassy” character, we aimed at making the beer feature a much more desirable lemongrass flavour, and bringing in more citrus notes to compliment it. Knowing this beer was going to be predominantly drunk alongside the racetrack, and while still quite warm, we wanted to make sure it was very drinkable. We decided to brew this beer as a cold IPA to make sure the gentle fermentation of the lager yeast could soften up the beer. The malt bill is crafted in more of a West Coast style to complement the lemongrass and citrus flavours we were going for. Consisting of Golden Promise as well as some wheat and dextrin malt for body, we felt simplicity here was important. For hops, we used a blend Azacca, El Dorado, and Idaho 7. Idaho 7 was strongly featured in the dry hop as the key hop for the lemongrass aroma. Azacca and El Dorado support that character by adding a orange, lemon, and lime citrus background, with a touch of sweet fruit and melon flavours. To keep the beer drinkable, the bitterness was kept low as the lemongrass can add a bit of perceived bitterness on the palette. We targeted a more balanced finish for this beer to keep it refreshing, but also made sure it had the backbone to support the lemongrass citrus flavours. Another fun and challenging beer to make that we feel not only captures some of the character of the track, but delivers on a refreshing and hoppy beer perfect for the outdoors.
