A West Coast IPA inspired by yesteryear, made just as you remember it!

For those who thought beer meant light coloured lager, their taste buds were in for a shock, and the next shock was just how fast the style spread.[Brewer's Voice]When asked by Seijo Ishii to make a classic American IPA, we were more than excited to oblige. Between Sculpin and Stone IPA, I (James Fox, head brewer) probably helped brew well over 100,000,000L of these beers during my career at Stone Brewing and Ballast Point. It was fun revisiting and crafting this recipe in the spirit of those beers, especially given the change in techniques and methods that have been made to adjust for modern palettes. These classic IPAs were a little overly intricate, and for that we have gone with a moderately complex malt bill, with 2 different base malts blended along with some Vienna and biscuit malts, giving the beer a golden colour, and offering some sweet caramel and toffee malt flavours. The hop additions were so plentiful, with so many varieties that I had to add extra lines to my recipe sheet! With hops added at 5 different points in the boil, and with multiple hops at each step, there is a strong layered hop character. Keeping it true to those days, nothing but classic American hops were used, specifically Centennial, Cascade, Chinook, Columbus, Simcoe, Amarillo, and Citra. These were used over various stages, from the mash, first wort, 60 minute, 20 minute, whirlpool, and dry hop stages. This results in a mix of floral, citrus, and piney hop character, and bringing a solid bitterness compared to most modern IPAs. Keeping it true to form, we used a water profile appropriate for the region these styles were crafted, with a high amount of calcium giving the beer a crisp and bright hop character. This beer was finished off with a California style ale yeast, leaving the beer clean, and balanced out by the malt character. This style of IPA really set off the trend of hop forward beers, and we feel they still stand the test of time to this day.
