KBC Barrel Aged Beers - Part4 - Summary and Release Info

The time is here! We are finally ready to begin the releases of our first barrel aged and wild beers that we have been introducing in our recent blog and Facebook posts. It has been a long time coming, further delayed by the unforeseen complications created by Covid 19, so we are excited to share the details regarding the release schedule as well as what formats these beers will be available in.

Both the production process and the distribution of these beers has been a huge learning experience for us. For our first few attempts we just jumped into the pool head first without really seeing how deep it was, which created a lot of issues with not having enough product to provide in more than one format as well as ensuring we could monitor its storage properly year round. As we headed into the end of 2019, we started to iron out a lot of these issues, and that preparation is now paying off with our ability to release multiple products at the same time. So, without further delay, here are the long-awaited details!

 

Bonds of Friendship(collab w/ Godspeed Brewery)

Jpn Name:
親友との絆(Shinyuu to no Kizuna)
Style:
Belgian Golden Ale(w/ brettanomyces)
Overview:
Collaboration with Godspeed of Toronto using our house Belgian yeast co-fermented with Brettanomyces.
Brewer's Comments:
Inspired by Orval, this beer co-fermented with Brettanomyces was not only a learning experience, but also a culmination of our long friendship with Luc “Bim” Lafontaine.

Winter's End (2018))

Jpn Name:
冬眠からの目覚め(Toumin kara no Mezame)
Style:
Belgian Imperial Stout(Barrel Aged)
Overview:
Our yearly Belgian Imperial Stout aged in domestic whiskey barrels for 14 months.
Brewer's Comments:
Our longest ageing to date, this beer took a long time to find a balance within the barrel. The result is a dry and complex Belgian Imperial Stout with rounded edges that still retains the unique chocolate and licorice notes of the original product.

Farmer's Table(collab w/ Upright Brewing)

一汁多彩(Ichijyuu Tasai)
Style:
Table Saison(w/ Brettanomyces)
Overview:
Collaboration with Upright Brewing secondary fermented with Brettanomyces
Brewer's Comments:
Simplicity and balance was the theme of this collaboration. The original release was a “normal” beer, and a portion of that was set aside to age with Brettanomyces, adding a complex dryness to the balance.

Okuriinu (2019)

送り犬 (Okuriinu)
Style:
Belgian Blonde Barleywine(Barrel Aged)
Overview:
The follow-up brew to our collaboration with Anglo Japanese Brewing Company (AJB Co.), this version is a malty yet dry barleywine aged in domestic whiskey barrels.
Brewer's Comments:
Yosuzume, our collaboration with AJB, produced one of our favorite beers ever. This is our followup brewed with the intention of barrel ageing.

Heretic's Revenge(collab w/ Heretic Brewing Company)

Overview:
Our collaboration brew with Heretic Brewing Company aged in domestic whiskey barrels.
Brewer's Comments:
The initial release of this beer was amazing in itself, but the portion we set aside to age in barrels takes it to another level!
