Strong and slightly boozy IIPA with pronounced tropical and resinous flavours and aroma

There is the element of what he wants to make, what he wants to try out, and what he wants to learn through the process.
But at the end of the day, the beer is for the customer to enjoy, and so it's important to ensure the product will end up balanced and drinkable. And so for this beer, we decided to... Argh screw it. Let's put all the hops in![Brewer's Voice]We decided early on the for this collaboration beer, we wanted it to be “Big”. So, we leaned into that idea and used some of the most impactful ingredients and processes at our disposal. Starting off we wanted to ferment this 9% IIPA with one of the most aggressive fruity yeasts available, Kveik. This yeast ferments aggressively and unlike most brewers’ yeasts, this yeast can handle much higher temperatures and, in the process, can produce incredible tropical fruity esters. Tropical quickly became the theme for this beer. The malt bill is a soft blend of base pilsner with almost 30% flaked wheat and oats, contributing a pillowy body and haze. This gentle body gives a great stage for the Hops to shine. We kept the bitterness low on this one by using hops only in later additions to maximize flavor and aroma. Amarillo, Azacca and Nelson Sauvin were used on the hot side contributing a sweet tropical citrus blend. We tasted the wort from this batch on the way to the fermenter and it was some of the best tasting wort I have had. Not only was this beer Double dry hopped with a hefty amount of Nelson Sauvin, Amarillo, and Idaho 7, but we also utilized our new dry hoping equipment designed to extract the most out of these hops. This system macerates the hops while recirculating the tank ensuring full access and contact with the hope oils boosting aroma extraction. This was fantastic collaboration with Y-Market producing a big bold tropical beer designed to be easy to drink while bursting with hop flavor.
