[Naming]
"Katsumei", literally meaning "life" but with a nuance of lifecycles and nature's equilibrium. It also can be connected with the lifestyle of farmers, and their connection to the earth. Saisons used to be a "farmhouse" beer, meaning farmers would make the beer using natural yeast and mixed grains, including many outside of the malted barley associated with beer. With this being a mixed grain beer, we imagine this might have something of the character of saisons of old.
[Brewer's Voice]
This version of Pilgrim's Respite is a revisitation of the roots of the Saison style. These beers were originally brewed for farmhand consumption and many times used grains other than barley that were produced on the farm or available in the local area. Malted oats, malted rye, spelt malt, and soba combine to make 35% of the malt total, giving this brew a unique and rustic grain character as well as a rich mouthfeel.
