They fit a wide variety of situations, and there's nothing really more satisfying than raising a thick glass full of lager. Or that first beer when you get home! Or that one that you crack open at the start of your meal, or drink when you get out of work. This series celebrates the cyclical and every day nature of the world's most popular alcoholic beverage. This product is "Tadaima", a rough equivalent of "I'm home". A beer for many occasions, but one that we think particularly fits when you walk through the door and want tha cleanness and dryness, but just that extra bitter bite to kick off your evening. </dd><dt>[Brewer's Voice]</dt><dd>There is beauty in simplicity, and Czech style beers are a supreme example of this. They keep their ingredient list simple, but are all about the process, making them ironically one of the more difficult styles to get just right. We wanted to keep with this sentiment for our Czech pils as well, the beer's simplicity allowing the quality of the basic ingredients to shine through. The base malt is straight up pilsner malt, with a touch of Vienna malts bringing a clean golden appearance, and just enough depth with a nice biscuit and toffee-like nuance. The hops are purely Czech Saaz, being added late in the boil to the bitterness moderate while imparting a nice floral, herbal, and spice character to the flavour and aroma of the beer. Perhaps the most important part of these types of beers is the yeast. Ensuring an appropriate pitch rate of healthy yeast cells is critical for ensuring clean fermentation and the development of clean yeast esters. Not only will unhealthy yeast produce off flavors during fermentation, but this will also result in limiting the yeasts’ ability to clean up the beer during cold conditioning, resulting in off flavours, which have nothing to hide behind in such a simple beer. This process is critical for making clean and beautifully repeat drinkable lagers, a staple characteristic of Czech-style beers.
