Made for and in collaboration with Isetan department stores, this beer is a light coloured saison with a touch of the tropics and spice, excellent for pairing with a range of food
We started off by thinking a bit about what would fit the bill. Beers like Orval and Paulaner Salvator are great pairing beers, and while very different, they have something in common. Whilst having a wide range of flavours, they are also balanced, with none overpowering the other, allowing the food to balance against, or blend together with, one or more of the characters in there.
These characterful beers were built on their malt base to start, so we looked to do the same, using our base pilsner malt, blended with some wheat for body and texture, some rye for depth in flavour plus a tad of spice, and a little honey malt for some added sweetness and backbone to support the hops and yeast character. The saison yeast brought some nice spice character, but we wanted to emphasise some more of the herbal and fruity character of the hops, and so went for Waimea and Riwaka. Waimea brings some candied orange and herbal character, while the Riwaka brings tropical passion fruit-like character. This beer has the layers that we were looking for, allowing each sip to bring out an extra flavour or aroma. While bright and straw coloured, the low bitterness allows the malt character, yeast, and hop nuances to perform together, drawing you in for another sip, until you realise you need another one!
