With floral honey aroma, and a deep body, this Maibock offers layers of character

Light in color and very drinkable, this Honey Maibock derives a semi-sweet fruit character from the hops and yeast esters, interweaving with the slightly herbal notes from the wildflower honey. At 8%, it has a nice warming body for those cold winter nights, but finishes dry enough not to weigh you down.
[Naming]
The Black Forest in Southwest Germany has been the setting for many a legend and fairytale since ancient times. Stepping into the forest, who knows what mysterious experience one may encounter. As curious as the imaginations of the local folk of yesteryear, these beers in this two-part mini series are also rich in flavour, and have in their spirit a somewhat adventurous twist.
[Brewer's Voice]
Maibocks are quite an underrated style, we feel. Designed to be a transitional beer, traditionally released while still chilly, but welcoming the arrival of spring from the winter months. It has a higher ABV, and a more malt-forward character, made up of a blend of pilsner and Munich malts, and boiled for an extended time. All of this helps in developing a complex flavour that can hold up to the colder winter nights. Despite this full malt character, it is still rather light in colour, and typically more hop forward than typical lagers, bringing out a floral and fruity character, making it refreshing and drinkable for such a strong beer. We decided to add a bit of wildflower honey, which we feel exemplifies this balance of sweet, and yet herbal and floral notes, adding just another layer of depth to the beer. With mostly traditional Saaz and Spalter hops being used, we added a touch of Rakau to offer a splash of fruity aroma. Being fermented cooler with a lager yeast, and allowed to condition for a couple of months, this beer is primed for drinking from when there is snow on the ground to when there are blossoms on the trees.
