Tama, meaning a ball or sphere, is a reference to the round and juicy grapes that provide the sharpness and sweetness of this beer.
[Brewer's Voice]We brought back the wonderful sour grape character from last years Tama. This beer is still comprised of a blend of Koho and red grape, but we wanted to leave just a tad more body in there, while still keeping it try enough. Fermented with a blend of lactic acid producing yeast and a European strain to help give the beer a dry wine like finish. The grape character comes through in a rich grape jam character with added notes of plum, dry fruit, and blackberries, giving the illusion of sweetness, despite the beer having a low finishing gravity. A moderate sourness comes through a blend of the lactic acid forming yeast and the natural mild acidity of the grapes.
