A revisited centuries-old and supremely drinkable golden treasure, the Belgian Single

[Character]

Inspired by the Trappist classic, this Belgian single is crisp, light on the palette and refreshing; a perfect beer for a midday treat. These beer’s light body with fruity and slightly spicy yeast aromas blend with pine, floral and grassy hop characters for a beautifully balanced beer, perfect for savouring or pairing with food.

Zucchini fritters served with herb salt, seared scallops and citrus fruit-infused salad, shredded chicken breast and celery stir-fried with black pepper.

[Naming]

Unlike its stronger brethren, there is an abbey beer relatively unknown in the wider world. The Belgian "single" has been made for centuries at monasteries but yet has always remained a relative secret, a "Monk's Reserve", as it were, made by the monks, for the monks. Perhaps you can enjoy this "Brewer's Reserve" while picturing a monk centuries ago raising his glass toward his lips once more, taking in the aroma before he says, "maybe we keep this one to ourselves..."

For this year's "Brewer's Reserve", we once again brought back some domestic hops, but gained them from a new source this time, and they are probably the best lot we have used to date. While Cascade, these hops are closer to European noble hops in character, in line with the traditions of this style, but do impart a touch of citrus and pine that compliment our house yeast's fruity esters. A touch of wheat malt and flaked wheat were added to give the beer a bit of mouthfeel and body while retaining its light color and drinkability. Like all our rediscovery series, this beer underwent secondary fermentation and was allowed to condition in cans/kegs adding a frothy head and a softer, and more delicate carbonation. Whilst traditional, the modern hopping style, and the use of domestic hops, creates something just a little different and unique to what one might find in Belgium, whilst still being completely true to style (albeit without the monastery!). We like to think that, if Belgian monasteries existed in Japan, they might have been drinking something quite close to this.
