While we haven’t taken to brewing true to style versions of Hazy IPA, the style du jour, as brewers and beer drinkers it is hard not to love the combination of huge hop aroma, low bitterness, and soft mouthfeel. Picking up hints from these individual characteristics, we normally experiment with applying them in Pale Ales and IPAs, but thought it would be fun to give it a whirl in a Double IPA this time around. The malt recipe is quite similar to previous experiments like Mariko and Minori, with 25% of the grain being malted wheat. For hops we tried to push the boundaries of our normal IPA production by using four unique varieties to give even more depth of character and aroma. And we didn’t skimp on the hops by any means...this beer has more hops in it than any other beer brewed at KBC to date!
The result is a luscious and full mouthfeel with a subtle but noticeable alcohol punch in the background. This really helps bring the fruit juice character to the front of the flavour and almost makes you feel like you are drinking something that came out of a blender; not a fermenter! While you probably won’t see beers like this flow from our taps on a regular basis, be assured there was nothing but smiles during the daily taste tests among the staff!
Naming: “Yawara” is a term that, when literally translated, it means soft but, to the Japanese, it holds a meaning of strength. To the Western mind, this may seem like a contradiction but in the world of Japanese martial arts, it makes perfect sense.
Upon tasting our latest double IPA for the first time, “Yawara" was the first word that sprang to mind, with its soft wheat-heavy malt base, complemented by a blend of four hops. It is only after getting quite far through this beer that it suddenly dawns upon the drinker, “wait, did I just read that this beer is 8.5% alcohol?”, and the reminder is served to treat this beer as an opponent that you would respect… Softly, please.
