If you have been drinking our beers over the last few years, you have probably noticed that we are really fond of both the Saison and IPA styles. For the Summer 2018 version of our seasonal Shunkashuto Series, we wanted to see what happened when these two styles were portrayed in one beer: “Saison meets IPA.”
To capture the theme, we used a combination of Belle Saison and American Ale yeast to ensure that the yeast character kept one foot in Belgium with the other firmly planted in the USA. The finished product is dry like a Saison but without excess fermentation character from yeasts typical to the style, letting the hops shine brightly. Front and centre in the flavour and aroma here is a new variety called El Dorado, with another interesting newcomer to the hop market, Huell Melon, for background flavour. The result is a unique fruit composite of what ranges from melon to pineapple to bubble gum with each one highlighted or muted depending on which yeast is supporting the flavour in that sip.
