Shunkashuto ('Four Seasons') began as an attempt to brew a Saison that fit the season it was being released in. In Spring, we decided to relaunch our Shunkashuto series with a classic crisp and dry saison. For this Summer, we instead decided to base our nose profile around fruity, American hops.
While the hops in our Spring Shunkashuto were those typical of a traditional saison in Belgium, this time we selected 3 very different varieties for the flavour and aroma. The first, Belma, is a hop that gives off grapefruit and strawberry characters. The second, HBC344, has notes of refreshing tropical fruit, and the third, Zythos, is known for pineapple and citrus aromas. We layered this tropical fruit character onto Belgian pale ale malt mixed with a small amount of oats to give an even balance between the grain, yeast and hops.
