To many, the Summer is a lager season. Nothing quite hits the spot like a light crisp beer on a hot day. With our newest release of this light lager, it is designed for exactly that: being incredibly refreshing on the hottest of Kyoto summer days. This beer is designed to fall right in between a Czech style pilsner and American light lager, with a little German flair. A touch of Vienna malt adds some depth and sweetness to the body, while flaked corn ensures the body is light and crisp with a dry finish. We used a combination of Sterling hops, which is an American Saaz variant. This hop adds bright floral and herbal spice, while the addition of X-14 adds more of a lemongrass and citrus character with a touch of fruitiness. We wanted to pull from some of our favourite aspects of several different lager styles to make this beer satisfying regardless of what we're craving at the time. The beauty of this lager is its simplicity, and what makes a great lager is not the combination of ingredients but how it is conditioned and treated along the way. We did an extended cold conditioning of this beer allowing the lager yeast to develop its flavour, while fully absorbing the undesirable flavours produced during primary fermentation. This beer offers rich but delicate hop nuances with a crisp malt profile making it interesting to the palate while keeping its refreshing and clean characteristics.
