A super aromatic hazy IPA featuring plenty of tropical fruit character from the Motueka hops and active Thiols
[Character]The first of our big Thiol and phantasm series of IPAs. Motueka is center stage in this Hazy IPA with flavors and aromas of passionfruit, citrus, lime and grapes. This beer is pale in color, easy to drink, with a bit of wheat for body and a crisp finish.[Food Pairing]Grilled leeks in garlic butter, grilled chicken thighs with yuzu miso, and whitefish fritters with citrus salt[Naming]Goketsu is a word that means something akin to a superman, or hero, and we felt this works well for the suped up modern hybridised hop varieties, especially when paired with thiol releasing yeasts or the thiol-boosting Phantasm. Hopefully this superhero's powers live up to the name![Brewer's Voice]For our first of 3 installments of IPAs focusing on utilizing thiols, we have our “Mega Motueka” triple dry hop IPA. With “Mega” in the name of the featured hop, we knew that we needed to go big with these beers. The base beer features Golden Promise malt with a large portion of flaked wheat for some mouthfeel and body. We added a hefty amount of Motueka throughout the brewing process in order to capitalize on Motueka’s thiol contributions. First, we added Motueka in the mash which utilizes enzymes in the saccharification process to help unlock bound thiols in these hops. A late boil addition of Motueka adds a bit of citrus hop flavor and mild bitterness. Then we got to the whirlpool, which is where the Mega side of this beer really starts to take shape. With more than double our typical whirlpool charge of hops, this beer received a blend of "Mega Motueka" hops. This included a Phantasm infused Motueka hop pellet, Southern cross (known for amplifying thiol aromas), and even more Phantasm! (because why not?) If you haven’t had Phantasm in our previous beers, it is a thiol precursor rich powder made from Sauvignon Blanc grapes. This high amount of thiol precursors allows our thiol libre yeast to convert them into 3MH and 3MHA thiols that give the beer a tropical passionfruit and grapefruit citrus like aroma. The hops didn’t stop there! More Mega Motueka was added during fermentation to target biotransformation of these hops, unlocking more thiols and giving the beer a strong hazy and soft hoppy mouthfeel. Last but not least, the beer got additional hops post fermentation consisting of a concentrated Motueka Cryo hops and Riwaka to triple down on those wonderful tropical fruit flavors.
