[Character]Tart and refreshing, this Berliner Wiesse is bursting with raspberry flavour with moderate acidity and enough body from the wheat malt base to make it very approachable.[Food Pairing]Dark Chocolates, vanilla Mochi, Seared yellowtail, Braised beef with ginger[Naming]Made using copious amounts of raspberry puree, this is a beer that took a lot of sunlight in the making, and in turn is a super refreshing sour perfect for enjoying while basking under the sun's rays.[Brewer's Voice]Being "Sun Kissed" is something we are all familiar with living through the Japan summer heat. The heat is not all bad though, along with all that sunshine come freshly harvested Raspberries. At first glance, there is no mistaking that this is a Raspberry beer with its vibrant red color. But there is a lot more depth than just a simple sour ale. For this beer I was inspired by a traditional Berliner Weiss. Typically, this style is a mild wheat beer with a touch of sourness contributed by some lactobacillus. To spice up this beer style it is traditionally accompanied by the addition of a flavored syrup such as woodruff or more commonly a "Himbeersirup" or raspberry syrup. So, the concept of this beer was simple, brew a very traditional Berliner Weiss, but replace raspberry syrup with Raspberry fruit and deliver it all in one package! The result is a beautifully sour Berliner Weisse with vibrant raspberry flavor and aroma with a natural sourness derived from the raspberry juice.
