This New England Style of IPA is the 2nd of 3 beers centered around Mosaic hops. This IPA is very approachable with a low bitterness and tons of late addition mosaic hops with a splash of Sabro, structured around the hazy and soft malt profile that brought the New England style into fame.
[Character]Medium bodied malt profile with just a touch of sweetness, heavy on oats and wheat for a soft but fully body mouthfeel. The combination fo Mosaic and sabro bring a blend of berry, melon, coconut and tropical flavors that round everything out into a juicy IPA with low bitterness.[Naming]The idea of “Shingyoso” comes from calligraphy, and represents three different lines of thought.
Gyo is stepping away from the norm, and may be equated more with handwriting vs a more formalised structured writing, allowing some more expression and personal nuance.
This beer is also a step away from the classic American IPA, having moved more in the hazy direction, but is still aligned with what one might consider the "norm" for the New England form.
[Brewer's Voice]For our second iteration in our Mosaic hop showcase miniseries, we went with an East Coast IPA theme. East Coast IPAs are known not only for their hazy juicy character, but for the soft bitterness, and the touch of sweetness that accompanies them. For this beer, we started with a heavy amount of wheat and oats, giving the beer a natural haze with a soft pillowy mouthfeel. Rather than our normal pilsner malt, we used maris otter and golden promise, which gives the beer extra body, and a slightly softer and deeper malt character, to build our hop character on. Obviously, a generous amount of Mosaic was used with this beer, but in addition to Mosaic, we paired Sabro with it to really lean into the soft character of this style of IPA. This results in a berry-forward aroma with notes of pineapple and coconut, and with a sweet candy-like finish. We also took an unconventional approach with yeast for this beer, by using an English strain of yeast known for contributing gentle fruity yeast esters, and leaving a bit of residual sweetness behind.
