A complex yet very balanced, drinkable, and moreish English pub ale

[Character]
This English style Extra Special Bitter balances a full malt character with a medium caramel flavor, this is paired with a medium hop bitterness and soft fruity aroma to offer a full flavor experience with great drinkability.
[Food Pairing]
"Kikuimo" tempura, sheppard's pie, charcoal grilled white fish such as "Okibora" (striped or grey mullet).
[Naming]
Well this is a tough one to translate! The Japanese name is a total play on kanji and symbols, starting with 〼 which is a mark that can be read as "masu" but has a few meanings, including the "masu" that is the wooden square cup that sake is traditionally drunk from. The "八○" is 8 and then the circle is often used as a sign to mean "good", and the phrase "masu masu hamaru" means to get "more and more addicted". So as you reach your 8th masu, you'll probably be feeling pretty good, and will only be wanting more! Confused? Don't worry about it - another pint, sir?
[Brewer's Voice]
When meeting with Ape Brewing and visiting their facility, I was impressed with the quality of beer they were putting out, especially for their small space. It goes to show you that a good brewer can make great beer anywhere if they know what they are doing. One style specifically they brew frequently and very well is English style beers.

I love a great English beer and jumped at the opportunity to make another one with Matchan (Matsumoto-san, their head brewer, and former colleague of ours). English beers are great classical styles that tend to be a bit more malt focused and are perfectly suited for the colder season. I tried to incorporate as much of Ape brewing’s style as possible in this beer when scaling it to our system. The malt bill consists of one of my favorite base malts, Maris Otter. From there we layered on a blend of different crystal and amber malts for a depth of flavor and a touch of black wheat for color without adding the harsh bitterness associated with many dark malts. The hop profile is mild, and was kept traditional, with a blend of East Kent Goldings and Fuggle Hops giving the beer a touch of herbal and spice character with enough bitterness to balance out the malt sweetness. This beer was fermented with a blend of London ale strains and had an extended cold conditioning in the fermenter, allowing time for the yeast to impart its flavor and let the character soften and meld together. This is beer is well suited for an English style pub, and one that balances having enough body to hold up to the cold weather. It's also great for pairing with hearty winter meals, while also maintaining its drinkability to have a few over the cold evening.
