[Naming]
Adding fruit to provide nuance to a beer always contains a certain amount of risk. Will it work well together? How will the flavour change over time? Making beer and learning is a never ending mission, and sometimes feels thankless. When it all comes together, though, the rewards are plain to see. We did roll the dice a little, but this name is also a call out to ourselves to never give up, and keep pushing ourselves.

The dark colors and rich malt flavors of this style are rare in the catalog of traditional Belgian brews. The result is a simple marriage of fruity yeast esters, the dry fruit nuances of crystal malts, and specially processed dark sugars, but its dark color and rich flavors stand out compared to the light, yeast driven flavors of beers like Tripel and Saison. While the base recipe for this beer is quite traditional, we incorporated sanontou (light brown sugar) and figs to further support the flavor profile and add a slight Japanese twist. Enjoy this new interpretation of a classic Belgian style!
