A classic yet modern American IPA; clean, tropical, citrusy, and very, very drinkable

A soft and dry malt profile with a touch of biscuit flavor lays the groundwork for this West Coast-inspired IPA. A medley of tropical, citrus and resinous elements adorns the aroma of this beer, giving you a flavourful and very drinkable IPA.
[Food Pairing]
Fried white fish with tartare sauce, potato salad accented with shredded "rakkyo" onions, roast pork belly with rosemary and spices.
[Naming]
In restaurants in Japan, one may well see "chef no kimagure" on the menu, which essentially means "what the chef feels like", and is typically seasonally based, with local ingredients that he thinks will work together, we wanted to bring this into beer, creating an IPA fitting to the season, and based on what we see and fancy using right now in our hop storage!
[Brewer's Voice]
For this year’s Haru No Kimagure we took a modern twist on the classic West Coast style IPA, adding some New Zealand aromatics. Keeping the beer light and crisp, we used primarily Pilsner malt with some wheat and Munich malt to give it enough body to support the hop character, with an emphasis on ensuring we had a clean canvas for the hops to shine. A tough of sugar was added to dry the beer out and keep it crisp and drinkable. For the hops, we went with New Zealand Cascade, Rakau, and Nelson Sauvin, with the Cascade adding some familiar citrus characteristics from its North American ancestry, but with an emphasis on tropical citrus without the normal grassy and pine character of regular Cascade. Evenly matched with the Cascade is Nelson Sauvin, giving the beer a lime zest and white grape-like character, and adding a herbal and flowery nuance as well. Lastly, Rakau was added to the whirlpool for its stone fruit and resinous contribution. Fermented with a California Ale strain that finishes clean and dry character, allowing the hop profile to dominate. There is just enough bitterness here to help give the hops some backbone, but not so much to stop it being repeatedly drinkable.
