A cross between a Wit beer and IPA, this citrusy white IPA brings together wheat malts and classic west coast hop staples in one soft but aromatic package.
[Character]A hefty amount of wheat and oats presents a famliliar pillowy wheat beer base, bursting with citrus hop aromas from a blend of classic American Amarillo, Cascade and Centennial hops with a splash of NZ cascade for some more vibrant Citrus aromas.[Food Pairing]Fish and chips with dill infused tartare sauce, deep fried crispy cauliflower with grated cheese, pork stew[Naming]In restaurants in Japan, one may well see "chef no kimagure" on the menu, which essentially means "what the chef feels like", and is typically seasonally based, with local ingredients that he thinks will work together, we wanted to bring this into beer, creating an IPA fitting to the season, and based on what we see and fancy using right now in our hop storage![Brewer's Voice]Wheat beers and citrus is a combination that dates back before the use of hops in beer. The bright notes from the citrus and the acidy pair well with the body of the wheat beer to give you something that is refreshing but flavorful. I wanted to take this concept and expand upon it in the form of a more modern IPA. This malt base is comprised of a hefty amount of wheat malt giving the white IPA its signature body and creamy mouthfeel. For the citrus character I leaned on more traditional American hops know for their citrus contributions. Cascade is defined by its citrus characteristic with a blend of orange and grapefruit with notes of pine. Amarillo hops contribute more of a lemon and orange citrus character with a background of floral and tropical fruit character. Centennial hops add a layer of grapefruit citrus with some added resin and pine character. Lastly, but not least is the addition of New Zealand Cascade which departs from its north American roots and offers a strong grapefruit and deep citrus notes with a splash of berry and apple blossom character. This blend of hops Brings together a bouquet of citrus aromas and flavors pairs with a clean white IPA base. Despite all these hops the bitterness was kept low to ensure it keeps its drinkability.
