[Naming]
The Rokkasen series' concept is based around taking a fruit and expressing it in an IPA form, with the addition of fruit. The naming convention for the individual products literally refers to "果" ("ka") meaning fruit, and then a character representing the fruit or character. This time it is "房" ("fusa"), literally meaning "bunch".
[Brewer's Voice]
Once august comes around it becomes harvest season for wineries as the grapes begin to fully mature and ripen on the vines. We wanted to capture the essence of the late summer grape harvest with this beer, bringing together the citrus herbal and tart notes from white grapes as they are pressed and turned into wine. My goal was simple, I wanted to blend and blur the lines of the flavors and aromas between a refreshing white wine and a tart and fruity IPA. We focused on keeping a refined malt bill consisting of high quality pilsner malt with just a touch of oats for some mild body in the beer. It was hopped with a blend of Nelson Sauvin, Sabro, Southern Cross, and Riwaka hops. Nelson is known for its fruity chardonnay-like character, Sabro contributes just a mild tropical sweetness to soften the aroma profile, Southern Cross is there in a supporting roll to amplify the tropical flavorsm and the Riwaka contributes bright notes of citrus. All these hops were added late in the brewing process to keep bitterness to a minimum and maximizing their aroma contributions. This beer was fermented with a blend of London ale and Philly sour yeast, contributing a mix of fruity esters and lactic acid to sour the beer and bring forward the citrus characters. Lastly, we conditioned this beer on white grape juice to add the tanic and fruity character of a white wine. This is the perfect beer to enjoy on a hot summer day, and relax and enjoy what the seasons have to bring.
