Mosaic hops are the focus of this west coast inspired IIPA. Utilizing a centrifuge technique refered to as clean fusion to give a clean and crisp hop character, this beer showcases Mosaic hops with Citra in a supporting role. The result is a vibrantly hopped but crisp and easy to drink IIPA in the west coast style.
[Character]This beer has a dry and crisp malt profile brewed in the modern west coast style, a mild bitterness with huge aromas of berry, citrus and stonefruit. [Food Pairing]Butter and rosemary roast pumpkin, Swordfish Meunière with Chimichuri sauce, Pulled pork and cilantro tacos[Naming]The idea of “Shingyoso” comes from calligraphy, and represents three different lines of thought. “Shin” can be equated with being “orthodox”, with the idea of being fixed into a set of rules and classic technical elements that must be mastered. There is limited creative freedom, but it can be appreciated for its fine execution and technical accuracy.
This first entry in this beer series, similarly, is clean and crisp, and through this it is possible to experience the character of mosaic hops in their clearest form.[Brewer's Voice]I got my start in the brewing industry on the West Coast in California. So, West Coast IPA’s have a special place in my heart. West Coast IPAs should be crisp, clean, dry, and unapologetically hoppy. This beer style is not afraid to lean into the dank and resinous side of hops. For this Mosaic forward West Coast IPA we wanted to not only deliver on all these factors but to give the purest hop character possible. To do this we were able to utilize one of our newest pieces of equipment, a centrifuge. Prior to dry hopping we processed this beer through our centrifuge which removes the yeast and other organic materials to leave nothing but clean wort behind. We take this clean wort and use our Hopnik Dry hop system to get full extraction of the hop character. This results in an unobstructed and a much truer expression of Mosaic Hops with an accent of Citra. A simple malt profile of pilsner malt with a touch of Munich malt and wheat accompanies the berry, citrus, and pine character for the hops.
