A soft, clean and hop-focused beer, matured at low temperature for a West Coast IPA-esque lager

・Grilled yakitori with yuzukosho (yuzu citrus infused chili paste)[Naming]We went West Coast/East Coast themed for this two beer mini-series, but rather than focusing on the rougher side of East-West rivalry, we felt that the more creative side of breakdancing was a better fit, bringing in a bit of a parallel between the creativity of the art and craft beer making.[Brewer's Voice]The idea of a "Cold IPA" has been around for years, originally called an IPL (India Pale Lager). The concept was simple, take the big hop impact you find in IPAs and apply that same methodology to a beer fermented and conditioned with lager yeast. This fermentation and extended cold conditioning lends itself to a beer that is clean, crisp and easy to drink. So, adding a punchy hop character on top of that can be a winning formula. We started off with a simple light lager style malt bill with just golden promise and a small amount of wheat malt. Cashmere was added at the end of the boil to give the beer a nice soft tropical flavor, and we built on that with a blend of Simcoe and Citra in the whirlpool. This gave the beer a nice tropical and resinous aroma while keeping the to a mild bitterness. After a long and slow fermentation, allowing the beer to clean up with the extra conditioning time, it was dry hopped in an IPA fashion. Here we used another helping of Cashmere and Citra hops, with the addition of T-45 (Cryo) El Dorado. These T-45 hops are cryogenically frozen allowing the hops growers to remove more organic material concentrating those lovely hop oils.
