Highly balanced Belgian IPA with a hoppy fusion between 4 different remarkable IPA styles
As with all the beers in this series, her yeast character, built on our house strain, is Belgian. Her malt bill’s heavy wheat base, however, is somewhat akin to that of an East Coast style IPA, bringing a softer body and mouthfeel, both helping with making the hop load more approachable, but also supporting the fruity Belgian yeast esters. Mariko’s hops are a blend of New Zealand Riwaka and American Talus hops, bringing a combination of tropical and citrus aroma and flavour, and just a touch of pine and resin, making her almost fusion West Coast and New Zealand in character. We added a huge amount of “mash hops” in making this, creating a soft bitterness, but kept the beer dry, leaving the finish crisp and refreshingly moreish.
While technically a Belgian IPA due to the yeast profile, the rest of Mariko truly takes aspects from beer styles and ingredients from all around the world.
