The Nelson Sauvin showcase edition of our "boosted" series is a hazy IPA with a soft mouthfeel but packed with fruity impact
[Character]For the second beer in our thiol and Phantasm IPA series, we went on the softer side with an Oat Cream DDH IPA. While this Hazy IPA has a soft and creamy mouthfeel, it is still bursting with hop aromas and flavors such as muscat, grapefruit, passionfruit, and citrus.[Food Pairing]Roasted brussel sprouts with pecorino romano, battered white fish with sour cream, braised chicken thighs and turnips, infused with thyme[Naming]Goketsu is a word that means something akin to a superman, or hero, and we felt this works well for the suped up modern hybridised hop varieties, especially when paired with thiol releasing yeasts or the thiol-boosting Phantasm. Hopefully this superhero's powers live up to the name![Brewer's Voice]The second of our thiol series of IPAs, this beer features Super Sauvin Hops. As you may have guessed from the name, this hop consists of Nelson Sauvin hops, but with the addition of Phantasm powered blended in with the pellets. This hop adds precursors for thiols in the form of 3S4MP, 3SO, and 3SH. What are these!? These are naturally occuring compounds that can add notes of grapefruit, citrus, muscat, and passionfruit. We built this beer around an East Coast hazy base, with Golden Promise and Maris Otter malts, a bit of lactose, and a large amount of oats, giving the beer a creamy and soft mouthfeel, perfectly suited for showcasing these tropical flavors. Hops were used in both the mash and during fermentation, allowing enzymes in the wort, and yeast in the fermenter, to unlock thiols bound in these hops. Again, we used a specialized yeast designed to make the most out of these thiols. We once again didn’t hold back on this beer, hops were added every part along the way, including in the mash, kettle, whirlpool, during mid-fermentation, and dry hopping. Despite the immense amount of hops, we aimed to keep the bitterness low to maintain drinkability.
