Crisp Tart Apple Ale blurring the lines between cider and beer
[Character]A dry crisp cider/beer hybrid fermented with Fuji apples, giving a tart refreshing finish.[Food Pairing]Spicy radish noodles, Baked eggplant, Daikon Oroshi Mochi[Naming]This beer's name comes from the tekika pruning process used by Japanese apple farmers to ensure their trees produce the biggest and tastiest fruit possible. A portion of the juice used comes from under matured apples removed from trees during tekika.[Brewer's Voice]Tekika is back again this year. We are again using A blend of Japan sourced Apple juice in the creation of this dry cider beer hybrid. This large portion of apple juice is the main feature of the beer giving a depth of flavor and aroma. To bring forward even more apple character this beer was fermented with a French Saison Yeast strain which results in a very dry finish and a bit of spice and apple esters from the yeast to accentuate the cider character of the fermented apples. Just as with our other fruit sours, we wanted to ensure a tart refreshing finish, but unlike our other sours, we used an apple-derived malic acid to sour the beer, which further brings out crisp apple characteristics.
I am personally a fan of Cider as well as beer, so this is definitely a beer I am looking forward to, and a great beverage to welcome in the fall season.
