A classic-yet-modern saison; elegant, characterful, and easy to drink
[Character]Our flagship secondary-fermented saison, with bright fruit character, and a dry finish, perfect for pairing with a wide range of foods.[Food Pairing]White wine braised pork belly, fried white fish with herbs, green salad with yoghurt, garlic and lemon dressing.[Naming]Ichigo ichie is a well known idiom in Japanese meaning "one chance meeting". The idea behind it, originating in tea ceremony, is that each moment is unique and unrepeatable, and therefore one should treat it as a once-in-a-lifetime opportunity. We felt it is a philosophy that can also be applied to the making and offering of beer, and also like the nuances relating to how chance meetings can also change the course of our lifetimes, much as the encountering of a perspective-shifting beer.[Brewer's Voice]The saison was the first style we ever decided to make as a brewery. While not dissimilar in appearance to a light lager, the Belgian yeast brings layers of character and complexity whilst finishing supremely dry, making it both characterful and supremely drinkable. As with all great styles that one might want to enjoy all afternoon, its key is in its balance between the core ingredients of malt, hops, and yeast.
Our flagship saison, Ichigo Ichie, is both traditional in its base, and the fact that it is refermented in can for spritzy carbonation and to allow itself to evolve over time, and modern in its nuances. The beer has a bright citrus and tropical aroma thanks to the use of our carefully selected New Zealand Motueka hops.
