Using a variety of citrus juice and peel, along with fragrant Japanese Citric's peel, this fruit sour offers a compelling combination of acidity, bitterness, and sweetness
[Character]This Citrus forward fruit sour is loaded with Japanese citrus aroma in the form of hassaku, yuzu and iyokan peel, with plenty of grapefruit and orange juice along with citrusy hops to create a well rounded triangle of characters.[Food Pairing]Fried chicken with sansho, raw onion and citrus fruit salad, fried white fish "nanbanzuke".[Naming]Citrus fruits are almost infinite in their variety, but have certain crossover attributes, starting with their round shape, going through to the triangle of flavours: bitterness in their peel, and acidity and sweetness in their flesh. We wanted to represent all of these elements in a beer, and so used a variety of different fruits, where we took the elements we think stand out best to bring a character that we feel represents "citrus" well.[Brewer's Voice]We are bringing back ○ to △ for a second time, our sour ale using a blend of Japanese citrus peels and juices, but this time we have ramped it up significantly! The malt backbone is made up of a clean pilsner and wheat base, giving the beer a bit of body to hold up to the huge amount of juice. This beer was soured using Philly Sour yeast this time, with a blend of orange and grapefruit juice, adding the juice character whilst fermenting out to stay dry. The majority of wonderful aroma comes from the peel, though, where an enormous volume of Hassaku, Yuzu, and Iyokan peel from Arida in Wakayama was used on the cold side. We worked together on this one trying different blends of these peels in different ratios before we found one that was just right. The overall impression is a juice-like appearance, a fresh citrus brightness, with acidity and just enough bitterness rounding it off.
