[Naming]

The Rokkasen series' concept is based around taking a fruit and expressing it in an IPA form, with the addition of fruit. The naming convention for the individual products literally refers to "果" ("ka") meaning fruit, and then a character representing the fruit or character. This time it is "桃" ("momo"), literally meaning peach.

[Brewer's Voice]

This series focuses on combining hops reminiscent of certain fruit, and complimenting them with the actual fruit.

Our second release in this series is focused on peaches, using Japanese white peach juice. We decided to take the hazy IPA style, and take advantage of its juicy notes, thick mouthfeel, and the sweet aromas that the style is known for.

The mouthfeel is created using some unmalted wheat and oats, which also create the cloudy appearance. To this, we added Citra and Strata hops, and smaller amounts of Mosaic and Idaho 7. These created plenty of peach and other stone fruit nuances in the base beer, to which we added white peaches. Aside from peach character, these also added to the thick mouthfeel.

Despite the soft mouthfeel and sweet aroma, this beer actually finishes drier than most hazy IPAs, and the gentle acidity from the white peach gives it another fruit element that can be enjoyed. We also hope you enjoy the experience as the beer warms in the glass, bringing out different elements of fruit, just as real fruit can be experienced differently whether cold or warm.
