We carefully tried and selected from a range of different teas, choosing those which we felt would work best in this type of beer.
While we wanted to showcase what we like about the tea, the first aim for us was to make a balanced saison, where the yeast's esters shine through, the body remains bone dry, and the hops mix with the tea to provide just the right grassy nuances, making it that extra bit refreshing.
