From the beginning, the Shunkashuto ('Four Seasons') series was meant to be an avenue by which we express the atmosphere of each season through a Saison-style beer. With the first release of this series in 2018, we are excited to utilize a new technique that allows us to add an additional weapon to our brewing arsenal: kettle souring.
Taking what we learned from Purple People Eater, our collaboration with Heretic Brewing Company, Shunkashuto Spring 2018 uses kettle souring to produce a refreshingly light Saison. Despite having such a simple base recipe with only one malt and a very small hop addition for bittering, the result is a balanced Saison with much more depth and character than the low ABV would suggest. The result is a perfect companion to the nuances of Spring that are beginning to show just around the corner!
