永遠に (Stay Gold)
We are very proud of our house yeast here at Kyoto Brewing Co. and the fact that we are one of the only breweries in the country that uses a Belgian strain for the majority of our beers. One downside of that fact, though, is that many people think we brew Belgian beers, which is normally not the case. Instead, we combine the unique fermentation character of Belgian yeast with ingredients and techniques more common to “new world” brewing, striving to create a hybrid that shows the best of both worlds.
This brew is no different. The original inspiration came from traditional Belgian Blonde ales, which usually have understated yet complex flavor combinations that belie the simple recipes they are created from. We retained the focus on yeast driven flavors but decided to turn down the ABV slightly and increase the hop character to levels that are more common in modern brewhouses. We also blended traditional European hops with new varieties grown there that show more of the impactful citrus characteristics of hops from places like the United States or New Zealand.
The result is a unique blend of both the modern and the traditional that is always a classic. A dry finish combined with a 5.5% ABV means this beer is very drinkable. The apricot and pear notes from our house yeast are subtle but pair seamlessly with the blend of spicy, herbal, and citrusy hops and invite another sip and another sniff. Naming: The Japanese name for this beer, "Towa ni" literally means "eternal" but the implication of it is an instruction to "be eternal". While striving to evolve and to continue to be original, there is a risk that the baby gets thrown out with the bath water. Cherishing what makes a style great in the first place is just as important as looking to the future. Aside from the colour, the name of this beer is a reminder, to ourselves as much as anyone, to help make ensure that the great traditions shine forever.
