Inspiration for the recipe came from a newly emerging style called Florida Weisse, popular in the Southeastern United States for their bright colors and refreshing fruit flavours. To call the beer a style is a bit of a stretch at this point, because for the most part anything goes as long as the beer is slightly sour and has an immense amount of fruit in it! While not at all traditional in the sense of the firmly established Berliner Weisse style, brewers in Florida took inspiration from these beers and added their own twist - namely in the form of copious amounts of fruit either grown or eaten in the region. The result is a powerfully refreshing beer that is perfect for the hot and humid days that typify the Florida climate.

While Kyoto is far from Florida, we feel that this beer hit the nail on the head for its refreshing, juice-like character. 15% raspberry puree was used to create this beer's beautiful deep pink colour with a refreshing aroma and flavour. No hops at all were used so that the flavour of the fruit could meld with the sourness of the beer, further increasing its drinkability. While the ingredients for this brew nearly broke the bank, we think you will agree it was worth it!

Naming: The sun provides a beautiful bounty to nourish all the world’s creatures, and this beer is a testament to the fruits of its labour. With “Taiyo no Megumi (Sun Kissed),” copious amounts of fruit are layered on top of a kettle sour base, creating a luxurious brew that tastes more of juice than beer that showcases the delicious gifts nature provides!
